意式茄丁酱配薄荷和欧芹

Ingredients
  • 2 eggplants
  • 2 teaspoons salt
  • 2 tablespoons peanut oil
  • 1 onion, cut into rings
  • 2 sticks of celery, finely chopped
  • 1 clove of garlic
  • 6 peeled, deseeded tomatoes (or a 400 g tin of tomatoes)
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 50g/1.7 oz raisins
  • 2 tablespoons capers
  • 50g/1.7 oz green olives, finely chopped
  • Salt and pepper
  • 1 bunch flat-leaved parsley, coarsely chopped
  • 1 bunch fresh mint, coarsely chopped
Preparation

将茄子切成 2 厘米的茄丁。撒上盐并放置约 30 分钟,让盐吸收茄子的水分。冲洗茄子,并用纸巾擦干。在煎锅中热 1 汤匙花生油。将洋葱、芹菜和蒜炒至透明状。加入粗切的西红柿并收汁 5 分钟。加入糖、意大利香醋、葡萄干、酸豆和橄榄。再炖 5 分钟。在另一口锅中热 1 汤匙花生油,将茄丁翻炒 5 分钟至金黄色。将茄丁放入番茄酱中,并放回锅中炖。用盐和胡椒调味。将平叶欧芹和薄荷拌入意式茄丁酱后享用。冷热皆美味!
