西葫蘆油炸玉米餅

      Ingredients
    - 2 tbsp olive oil
 - 1 zucchini (shredded)
 - 1/2 red bell pepper (finely chopped)
 - 1 small red onion (thinly sliced)
 - 2 garlic cloves (minced)
 - 1 tsp ground cumin
 - 15g/0.5 oz chopped fresh cilantro
 - 1 large tomato (seeded and chopped)
 - Juice of 1 lime
 - 1/4 tsp hot pepper sauce
 - 4 whole wheat or white flower tortillas
 - 200g/7 oz shredded Monterey Jack cheese
 - Salt and pepper
 
Preparation
    在煎鍋中倒入油,用中火加熱。加入西葫蘆、燈籠椒、洋蔥、蒜和孜然。煎 5 分鐘,或直到所有蔬菜都變軟。拌入香菜、鹽和胡椒。放在一旁。在小碗中混合番茄、酸橙汁、辣椒粉和辣椒醬。將 1/4 西葫蘆混合物均勻攤在每張玉米餅胚上,占一半空間。每張餅胚上撒 1/4 乳酪。將玉米餅胚對折。在大號煎鍋中煎玉米餅約 5 分鐘,翻轉一次,直到乳酪融化。將玉米餅切成瓣狀,配番茄醬享用。
