青南瓜乳酪薄荷煎餅

      Ingredients
    - 1 tablespoon peanut oil
 - 1 shallot, cut into thin rings
 - 1 courgette, coarsely chopped
 - 6 eggs, beaten
 - 100g/3.5 oz feta
 - 1 teaspoon dried oregano
 - Salt and pepper
 - Garnish: A few fresh mint leaves, finely chopped
 
Preparation
    在煎鍋中熱油。將蔥煎至透明色。加入青南瓜並煮幾分鐘。加入雞蛋並用小火煮至開始成形。將羊乳酪攤在雞蛋混合物上,繼續煮幾分鐘。用牛至、鹽和胡椒調味。撒上剁碎的薄荷。
