辣南瓜咖喱

Ingredients
- 2 tablespoons sunflower oil
- 2 onions, finely chopped
- 1/2 tablespoon dried chili flakes
- 2 cm fresh ginger, minced
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 tablespoon ground cumin
- 1 kg pumpkin, peeled, in 2 cm cubes
- 400ml/14 fl oz coconut milk
- salt
- 1 bunch fresh mint, coarsely chopped
- 1 bunch fresh coriander, coarsely chopped
Preparation
在大号奶锅中热油。将洋葱拌辣椒片煎至透明状。加入姜蒜,再翻炒大约 3 分钟。加入南瓜。用咖喱粉和孜然调味,再煮数分钟。加入椰汁并搅拌均匀。用盐调味。盖上锅盖并文火炖大约 20 分钟,直到南瓜变软。用新鲜薄荷和香菜点缀。
