Ingredients
- 300g/10.5 oz peeled and cleaned shrimp
- 50g/1.7 oz unsalted peanuts, finely chopped
- 1 tablespoon peanut oil
- 1 clove of garlic, minced
- 5 spring onions, sliced diagonally
- 60ml/2 fl oz sweet chilli sauce
- 400g/14.1 oz rice noodles, soaked for 2 minutes in warm water
- 2 heads pak choi, finely sliced
- 100g/3.5 fl oz bean sprouts
- 1 lime
- 2 tablespoons fish sauce (to taste, fish sauce is a salt substitute)
- 1 bunch fresh coriander
Preparation
将花生剁碎并在预热的炒锅中爆炒 1 分钟,直到略微烤熟。放在一旁。在同一口炒锅中用小火加热 1 汤匙花生油。翻炒葱蒜 1-2 分钟至柔软。拌入甜辣椒酱和少量清水,并加入泡好的面条。再翻炒 3 分钟左右。然后加入切碎的小白菜和生虾,再煮 3-5 分钟。用剁碎的香菜(留少量香菜叶用于点缀)、酸橙汁和 2 汤匙鱼露调味。用烤好的花生酱和少量香菜叶点缀。
