Pecan Pancakes

      Ingredients
    - 120g/4.2 oz all-purpose flour
 - 50g/1.7 oz pecans (toasted)
 - 1 tsp granulated sugar
 - 1 tsp light brown sugar
 - 1/2 tsp baking powder
 - 1/2 tsp ground cinnamon
 - 1/4 tsp baking soda
 - 1/8 tsp salt
 - 240ml/8.4 fl oz nonfat buttermilk
 - 1 tbsp peanut oil
 - 1 large egg
 - Maple syrup
 
Preparation
    Stir together the first 8 ingredients until well combined. Whisk together buttermilk, oil, and egg in a bowl; add to the flour mixture and stir. Pour a small ladle of batter for each pancake onto a hot, lightly greased large skillet. Cook the pancakes 2 to 3 minutes. Turn and cook the other sides. Top with some pecan nuts and maple syrup. Serve immediately.
