Apple crêpes

Ingredients
- 50ml/1.7 fl oz milk
- 2 eggs
- 1 tablespoon sugar
- 200g/7 oz flour
- Pinch of salt
- 20g/0.7 oz butter
- Extra butter for frying
- 1 to 2 apples
- Garnish: brown sugar
Preparation
In a bowl, mix the milk, eggs, sugar, flour and salt. Melt 20g butter and add to the bowl. Mix until a smooth batter is formed. Set aside. Core the apples using an apple corer. Cut the apples into very thin slices.Grease a hot pancake pan. Pour a small ladleful of batter into the pan, turning the pan so that the batter is evenly distributed. Cook for 1 minute. Arrange a few apple slices in the batter and cook for another minute. Flip the pancake and cook the other side for 1 minute. Sprinkle with brown sugar.
