Peach Buckle

Ingredients
- 115g/4 oz unsalted butter, softened, plus more for greasing the frypan
- 150g/ 5.2 oz plus 2 tbsp. sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 160g/5.6 oz all-purpose flour
- 1/4 tsp. baking powder
- 450g/1 lb peaches, pitted, peeled, and cut into 1.2cm pieces
- 1/2 tsp. ground cinnamon
- 35g/1.2 oz sliced almonds
Preparation
Preheat oven to 175°C/347°F/gas 4. Butter a medium sized frying pan.In a large bowl, mix butter and 3/4 cup sugar with an electric mixer until fluffy. Add eggs, one at a time, and vanilla. Beat to combine. In a medium bowl, whisk together flour, baking powder,and salt. With mixer on low speed, gradually add flour mixture to butter mixture; beat until incorporated. Fold in the cut peaches. Spread batter in prepared skillet. In a small bowl, mix together remaining 2 tablespoons sugar, cinnamon, and almonds. Sprinkle mixture over top; bake until a toothpick inserted in center comes out clean and topping is golden, 45 to 50 minutes.
