辣南瓜咖喱

Ingredients
- 2 tablespoons sunflower oil
- 2 onions, finely chopped
- 1/2 tablespoon dried chili flakes
- 2 cm fresh ginger, minced
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 tablespoon ground cumin
- 1 kg pumpkin, peeled, in 2 cm cubes
- 400ml/14 fl oz coconut milk
- salt
- 1 bunch fresh mint, coarsely chopped
- 1 bunch fresh coriander, coarsely chopped
Preparation
在大號奶鍋中熱油。將洋蔥拌辣椒片煎至透明狀。加入薑蒜,再翻炒大約 3 分鐘。加入南瓜。用咖喱粉和孜然調味,再煮數分鐘。加入椰汁並攪拌均勻。用鹽調味。蓋上鍋蓋並文火燉大約 20 分鐘,直到南瓜變軟。用新鮮薄荷和香菜點綴。
