石榴藜麥

Ingredients
- 330g/11.6 oz quinoa
- 700ml/24.6 fl oz vegetable broth
- 2 lemons
- 2 cloves garlic, minced
- 4 tbsp pomegranate molasses
- 1 tsp sugar
- 120ml/4.2 fl oz extra-virgin olive oil
- Small bunch of radishes, cleaned and sliced
- 1 cucumber, finely peeled with a julienne peeler
- 4 green onions, thinly sliced
- 50g/1.7 oz coarsely chopped fresh flat-leaf parsley
- 50g/1.7 oz coarsely chopped fresh mint
- Sea salt and freshly ground pepper
Preparation
在大煎鍋中用大火將菜湯煮沸。加入藜麥和 1/5 茶匙的鹽,攪拌一次,然後調至小火。蓋上煮約 15 分鐘,不攪拌,直到所有水分吸收,穀物變柔軟。將 1 個檸檬的皮磨碎,然後將 2 個檸檬各自對半切開,取汁裝滿 5 湯匙。在碗中攪打檸檬汁和皮、蒜、石榴糖漿、糖、1/2 茶匙鹽和胡椒,直到糖融化。慢慢拌入橄欖油,製成佐料。將大約 3/4 佐料倒入藜麥中,攪拌至均勻。將黃瓜與大蔥及剩下的佐料混合。將歐芹和薄荷一起加入藜麥中,輕輕攪拌均勻。
